They are a versatile food staple in many households, and for good reason. They are produced from our poultry and serve as both an ingredient and a main dish for various baked foods. They are gathered on automatic collection belts at the farm, stored at about 7°C (45°F), and then delivered to a central processing plant for washing, sanitization, and grading. Grading involves sorting the eggs into size and quality categories using automated machines. We use flash candling to detect any abnormalities, such as cracked eggs, eggs containing blood spots, or other defects. Eggs are one of the most economical and complete protein sources available. They are also pasteurized to destroy Salmonella and other bacteria, ensuring safety. They are ready-to-use, have reduced handling, minimal shipping costs, and eliminate breakage, resulting in reduced-cost formulations. Additionally, egg products are microbiologically sensitive and are an ideal growth medium for microorganisms, so they should be used solely in a fresh condition.
